Department: FROZEN FISH FACTORY & COLD STORAGE
To lead, plan, select, control, and prepare Fresh and Frozen Fish production for the Company.
JOB DESCRIPTION:
- 1. Reconciliation of stock card with that of physical stock
- 2. Training of staffs for better processing skills
- 3. Production cost monitoring including the yield recovering, labour and packing material usages.
- 4. Closely monitor the quality control according to the product specifications and requirement by customers
Pursuit of a program to develop and keep improving production process and the quality of product by selecting and packing value added products:
- 1. Customer orders and specification comply with the work plan
- 2. Strict compliance with Food Safety Standards (HACCP PLAN, BRC and SQF)
- 3. Quality monitoring and packing requirement
- 4. Ensure freshness and safety of the product
- 5. Making accurate cost calculations and implement cost control procedure
- 6. Documentation for traceability, receiving and dispatch of stock
- 7. Leading, guiding and training department staff
Core Responsibilities:
- 1. Provide the production plan for daily, weekly, and monthly according to the orders from the Customers
- 2. Well understanding of the products specifications and orders requirement from the customers.
- 3. Selecting and preparing raw material, packing material for fish production
- 4. Frozen Steaks and Portion Processing and packing according to the specification from customers
- 5. Supervising and monitoring of CO treated tuna processing to meet the daily target and products specifications
- 6. Provide leadership and manufacturing excellence to our factory
- 7. Inspect raw material and finished products to identify grades and defects and comply with the quality assurance standard
- 8. Ensure product stock is adequate for all distribution channels and can cover direct demand from customers
- 9. Ensure that different species of fish are recorded so that changing needs of customers are met
- 10. Provide daily production and order completion reports to factory manager
- 11. Analyse data to anticipate future needs for the production
- 12. Strictly monitor daily recovery yield and improve the efficiency
- 13. Maintain all processing equipment and tools are in good order and condition
- 14. Maximums reduce the fish wastage and increase value of fish wastage
- 15. Maximums increase the value of by products through value added production and new products development
- 16. Evaluate suppliers to achieve cost-effective deals and maintain trust relationships
- 17. Collaborate with inventory department and sales department to ensure business goals are met
- 18. Achieving all departmental key objectives that is Cost, quality, customer service, sanitation, safety, and environment.
- 19. Ensure sufficient safe and sanitary processing and packaging of consumer food products
- 20. Ensure safety at work to avoid any injuring of workers according to OHS policy
- 21. Ensure production is as per customer specification
- 22. Develop new products and new technology to achieve a better profit for the company
- 23. Sourcing and orders to packing material and consumable goods stock with lowest cost and avoiding insufficiencies or excessive surplus
- 24. Provide weekly and monthly production report to Factory manager
- 25. Reviewing processing department performance, aiming to meet or exceed targets.
FORMAL QUALIFICATION AND TRAINING:
- Degree or Diploma in Food or Marine Science from a recognized institution or equivalent with at least 10 years’ experiences in production chain of commercial tuna processing company.
- Have extensive years of experience in Manufacturing or Production or Processing management, Food Safety in companies with a commercial leaning, a track record of improving Daily production. He/she should possess broad commercial and business acumen and be a strategic thinker.
- Demonstrate a strong commercial, business development, tuna processing management background with proven ability to manage at executive level. The person should also have the ability to plan and implement business/production plans.
