To lead, monitor, control and report on the fish grading and fish processing for the Company.
JOB DESCRIPTION:
- 1. Grading of all fish including sashimi fresh and frozen tuna when receiving from fishing vessels or receiving stock from cold storages according to quality standard which set up by the company
- 2. Conduct quality inspection of fresh and frozen fish before discharge from fishing vessels and other suppliers
- 3. Inspecting and Grading of finished fish products according to the products specification
- 4. Inspect fish raw material and fish products and identify quality issues with the report to the management
- 5. Ensure that different species of fish are recorded and graded so that changing needs of customers are met
- 6. Lead and supervise the processing team to process value added fish products including CO treated tuna products, frozen tuna products and other fish products according to the specification and order requirement
- 7. Provide the professional training to the production staffs to improve the skills including fish grading and fish value processing
- 8. Maximum the value of the raw material and by products
- 9. Always comply with the quality assurance policy which set up by the company to meet HACCP PLAN, BRC and SQF requirement
FORMAL QUALIFICATION AND TRAINING:
- At least 10 years’ tuna grading experience with extensive knowledge of HACCP Plan and quality control.
- 10 years of CO Treated Tuna Processing experience in commercial leaning company with extensive knowledge of BRC, SQF and HACCP would be an added advantage.
